Desi Nectar cow ghee comes in 1kg and 500g airtight jars, traditionally made, with a granular (danedar) texture and the old-fashioned aroma. Stock is limited because it is made in small batches.

How to recognise good desi ghee

Smell, texture and colour are your best clues: a nutty, buttery aroma, a slightly grainy set, and a golden colour. Melted ghee should look clear.

• Some products sold as "desi ghee" are vegetable ghee with a desi ghee essence (flavouring). Read the label for the word "butter", "milk fat" or the animal source.
• No home test is conclusive, so ask the seller how the ghee is made.

Cow ghee or buffalo ghee?

Both are desi ghee. Cow ghee is usually more yellow and a little lighter in taste; buffalo ghee is whiter and heavier. Ours is cow ghee.

Storage

Keep it in a cool, dry place with the lid closed, and always use a dry spoon. It does not need a fridge. It may set firm in winter and soften in summer, which is normal.

Ghee is a rich fat, so keep portions moderate. Ghee is not lactose-free: a small amount of milk solids can remain, so if you have a dairy allergy or intolerance, check with your doctor first. If you have heart, cholesterol or weight concerns, ask a doctor or dietitian how much suits you.
