Desi Ghee in Pakistan: Bajaur Cow Ghee, Uses, Storage and Price

How Pakistani kitchens cook with desi ghee, how to choose and store it, where our Bajaur desi ghee comes from, and the 1 kg and 500 g price.

Desi ghee is clarified butter with a golden colour and a nutty smell. In Pakistani homes it is the fat behind the tarka on daal, the shine on a fresh paratha and the aroma of suji halwa on a winter evening. Desi Nectar's desi ghee is collected from the Bajaur valley in Khyber Pakhtunkhwa. This guide is about ghee as food: how kitchens here use it, how to choose and store it, what home checks can and can't tell you, and the desi ghee price in Pakistan for our 1 kg and 500 g jars.

In short

  • Desi ghee is valued for flavour. A little goes a long way in tarka, roti and sweets.
  • Choose by smell, texture, colour, the label and the seller's answers, not by price alone.
  • Keep it in a cool, dry place with the lid closed, and always use a dry spoon.
  • Home checks are only clues. Only a food lab can confirm what is in a jar.

What is desi ghee?

Ghee is made by heating butter (makhan) gently until the water bubbles away and the milk solids sink and turn light brown. The clear golden fat is strained and left to set. "Desi" usually means ghee made this home-style way from cow or buffalo milk. It is not the same as banaspati or "vegetable ghee", which are made from plant oils. Some products sold as ghee are blends or vegetable ghee with a ghee flavour or essence added, so the label matters.

Cow ghee is usually yellow to golden and has a lighter, more aromatic taste. Buffalo ghee tends to be paler, almost white, and heavier.

Bajaur desi ghee: where ours comes from

Our desi cow ghee is collected from the Bajaur valley in Khyber Pakhtunkhwa, in the north-west of Pakistan. It is clarified butter from cow milk, traditionally made (as stated on our listing), with a granular (danedar) texture and a golden colour. It is made in small batches, so stock is limited. If you want to know more about a batch, ask us on WhatsApp at 0305 5928890.

How Pakistani kitchens use desi ghee

  • Tarka (baghaar) for daal and sabzi. Heat a spoon of ghee, add cumin, sliced garlic and dried red chillies, and pour it sizzling over daal. Ghee takes the heat of a tarka well and carries the aroma of the spices.
  • Parathas and roti. Spread ghee between the layers and on the tawa for a golden, flaky paratha, or brush a little on hot roti.
  • Halwa and mithai. Suji halwa, gajar halwa, pinni, panjiri and sheera all start by roasting flour or suji in ghee until it smells nutty.
  • Rice and pulao. A spoon in pulao or zarda, or stirred into plain rice at the end, adds aroma and shine.
  • Saag and makki ki roti. A small knob of ghee melting on top of sarson ka saag is a winter classic.
  • Sautéing and shallow frying, in moderate amounts.

Because ghee has a strong flavour, many cooks fry in oil and save ghee for tarka, parathas and sweets. For everyday frying, see our guide to cooking with mustard oil.

What good desi ghee smells, tastes and looks like

  • Smell: nutty, buttery and clean. A sour, stale, soapy or paint-like smell means it is old or has gone off.
  • Texture: at room temperature good ghee is often grainy (danedar). It sets firm in winter and softens or melts in summer. Both are normal.
  • Colour: golden to yellow for cow ghee, paler for buffalo ghee.

How to choose desi ghee

  1. Read the label. Look for the milk source (cow or buffalo), the ingredients, the weight, and the packing and best-before dates. If vegetable oil or "vanaspati" appears in the ingredients, it is a blend, not desi ghee.
  2. Ask the seller how the ghee is made and where it comes from. A seller you can trust answers clearly.
  3. Pick a pack size you will finish. A 1 kg jar suits a family that cooks with ghee every day. A 500 g jar suits occasional use, or a first try.
  4. Check the jar. It should be airtight and sealed.
  5. Think about price. An unusually low price for "desi ghee" is worth questioning (see the price section below).

Home checks: what they can and can't tell you

These checks can tell you whether ghee seems fresh and well made. None of them is proof of what is in the jar, and none can detect every kind of mixing. Use them as clues, together with the label and the seller's answers.

  1. Warm-smell check. Warm a teaspoon in a small pan. Good ghee gives off a nutty, buttery smell. A flat, oily or chemical smell is a warning sign.
  2. Melt check. It should melt quickly into a clear golden liquid. Heavy cloudiness, spitting or a lot of residue can mean leftover water or milk solids.
  3. Set check. Melt a little in a glass bowl and let it cool, or put it in the fridge for a while. Ghee usually sets fairly evenly. Clear separate layers can hint at a blend, but temperature and how fast it cools also change how ghee sets.
  4. Palm check. A little ghee rubbed on the palm melts from body heat. This is often suggested, but many fats do the same, so it tells you very little.

What home checks can't tell you: whether ghee is cow or buffalo for certain, whether a small amount of another fat has been added, or how fresh the milk was. Only a food testing lab can answer those questions.

How to store desi ghee

  • Keep it in a cool, dry place, away from the stove and sunlight, with the lid closed.
  • Always use a dry spoon. Even a drop of water can spoil ghee.
  • It does not need a fridge.
  • If it smells sour or "off", don't use it.

A note on ghee in your diet

Desi ghee is a food, not a medicine. It is a rich fat, so keep portions moderate. Ghee is not lactose-free, and a small amount of milk solids can remain, so if you have a dairy allergy or intolerance, or any health condition, check with your doctor first. The nutrition information from the label is on the product page.
